Flour milled from einkorn (zea), one of the oldest wheat varieties grown in Greece and cultivated here for thousands of years. It has more fibre and protein than modern wheat and a lower gluten content, which gives bread a denser crumb and a nuttier flavour.
Use it for bread, pasta and baking, on its own or cut with all-purpose flour.
